Truffle-Infused Jjapaguri with Wagyu and Shiitake

Ingredients

For the Noodles:

  • 1 pack Chapagetti (or any black bean sauce instant noodles)
  • 1 pack Neoguri (or any spicy udon-style instant noodles)
  • 2 cups water

For the Protein:

  • 200g wagyu beef (or another marbled steak), cubed
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • Pinch of black pepper

For the Fusion Twist:

  • 3 fresh shiitake mushrooms, sliced
  • 1 tbsp unsalted butter
  • 1 tsp truffle oil (optional, for garnish)
  • 1 tsp mirin (sweet rice wine)
  • 1/2 tsp grated ginger

For Garnish:

  • 1 green onion, finely sliced
  • 1 tsp toasted sesame seeds
  • 1 small sheet of nori (seaweed), cut into thin strips

Instructions

1. Prepare the Beef:

  • In a bowl, marinate the wagyu beef cubes with soy sauce, sesame oil, minced garlic, and black pepper. Let it sit for at least 15 minutes.

2. Cook the Mushrooms:

  • Heat a skillet over medium heat and melt the butter.
  • Add the sliced shiitake mushrooms, grated ginger, and mirin. Sauté until the mushrooms are tender and slightly caramelized. Set aside.

3. Sear the Beef:

  • In the same skillet, sear the marinated wagyu beef cubes over high heat for 1-2 minutes on each side, ensuring a medium-rare finish for optimal tenderness. Remove from heat and set aside.

4. Prepare the Noodles:

  • Boil 2 cups of water in a pot. Add the noodles from both the Chapagetti and Neoguri packets and cook according to package instructions (usually 4-5 minutes).
  • Drain most of the water, leaving about 1/4 cup in the pot.

5. Mix the Sauces:

  • Add the Chapagetti seasoning packet, Neoguri seasoning (use half if you prefer less spice), and the vegetable oil from the Chapagetti. Stir thoroughly to coat the noodles.

6. Assemble the Dish:

  • Gently mix in the sautéed shiitake mushrooms and seared wagyu beef cubes.
  • Drizzle a small amount of truffle oil over the noodles for an elevated aroma.

7. Garnish and Serve:

  • Transfer the jjapaguri to a serving dish.
  • Garnish with sliced green onions, toasted sesame seeds, and nori strips for added texture and flavor.

Serving Suggestion:

Pair this dish with a refreshing cucumber salad or a light sparkling beverage to balance the rich, umami flavors.
